It is worth noting that the light grey ninja is still visible, although it is terribly difficult to see him. During gameplay he is only easily seen through puffs of dust he kicks up.

Flavours were first introduced in N 1.4, and allow you to change the colour of your ninja. The game starts with the black flavour, and a new flavour is unlocked every time a column is completed. There are 10 flavours in all, one for each column of the game (including the default). They are rewarded by the first, second, third, etc. column you complete, not the 00's column, 10's column, etc.

With no columns completed, the ninja is only available in black. In the order they are unlocked, the flavours are:
